Bhuna Ghosht

 



FOR MARINATE:
1 kg mutton pieces

1 cup yogurt

1 tbsp papaya paste

In a bowl mix together mutton pieces, yogurt and papaya paste. Leave for two hours.

Other Ingredients:

1 cup oil

6 green cardamom

6 cloves

2 bay leaves

3 medium tomatoes (blended)

Salt to taste

2 tsp coriander powder

2 tsp chilli powder

1 tsp Kashmiri red chilli powder

1 tsp cumin powder

3/4 tsp turmeric powder

1/4 tsp black pepper powder

1/2 tsp garam masala powder

2 tbsp lemon juice

1/3 cup fried and mashed onion

6 whole green chilies

2 chopped green chilies

2 tbsp chopped coriander leaves 

Method:

Heat oil in a large pot. Fry bay leaves, green cardamom and clove for 30 seconds. Add marinated mutton, salt, coriander powder, chilli powder, Kashmiri red chilli powder, cumin powder and turmeric powder. Stir well and cover. Cook on medium flame till yogurt water dries. Now add blended tomatoes and black pepper powder. Cook till oil comes on the top. Add lemon juice, whole green chilies and garam masala powder. Fry for a minute. Pour two cups of water cover and cook on medium low flame till meat is tender and gravy is thick. Dish out and garnish with chopped coriander leaves and green chillies. Serve hot. Enjoy!
