Biryani

Rice is the most eaten cereal in Pakistan or especially in Lahore. There are many methods of preparing rice like boiled rice, biryani, pulao, fried rice, etc. we can also say  Biryani is known as National dish of Pakistan. There are different methods of fragrant and colorful biryani, from meat (chicken, mutton, and beef) seafood (fish and shrimp), pulses, and lentils. However, the most popular recipe in Pakistan is student biryani. 

Ingredients: 

Rice ----- 1kg

Chicken ----- 1kg

Garlic paste ----- 2 tbsp

Ginger paste ----- 2 tbsp

Green chilli paste ----- 1 tbsp 

Salt ----- as taste 

Biryani masala ----- 2 tbsp 

Cumin seeds ----- 1 tsp

Bay leave ----- 2

Cinnamon ----- 5

Cloves ----- 5 

Cardmom ----- 3

Yogurt ----- 1 cup 

Yellow food color ----- 1 tsp 

Oil ----- 1 cup 

Dry plum ----- 5 piece 

Dry tamarinds ----- 5 piece 

Method: 

Take a pot, add oil, and heat for 2 mins. Then add ginger, and garlic paste and fry for 2 mins then add green chili paste, cinnamon, cumin seeds, cloves, bay leaves, and cardamom in it. Fry until the paste becomes golden. When it becomes golden then add half a cup of water. Then add salt, boiled chicken, dry plums, dry tamarinds, and yogurt to it. When the water becomes dry then add biryani masala and cook for 2 mins. Add 1.5-liter water (yakhni) to it. Cover the pot until the water becomes to a boil. Then add rice in it and cook for 10 mins at medium flame. When the water becomes dry then turn the flame low and add food color (mixed in 2 tbsp of water) in different places. And cover the pot for 10mins. After 10 mins the delicious biryani is ready for serving. Enjoy with sauces, shami qabab, and raita.
