Carrots are called root vegetables. Carrots are nutritious. They are packed with soo many nutrients like potassium, vitamin A, carotenoids, and carotenes. They are highly packed with fibers. They are low in calories and fats. They are the main source of vitamins and minerals. There are many recipes for carrots. Carrots are antioxidants. They are eaten in raw or cooked form too.

Ingredients:
Carrots ----- 1kg
Potato ----- half kg
Peas ----- 1 cup
Fenugreek (methi) ----- half bunch
Salt ----- as taste
Red pepper ----- 1 tbsp
Turmeric powder ----- 2 pinch
Coriander powder ----- 1 tsp
Black pepper ----- 1 tsp
Tomatoes ----- 2
Onion ----- 1 large
Garlic ----- 1 flower
Method:
Take a pressure cooker, add onion, garlic, tomatoes, salt, red pepper, turmeric, coriander powder, fenugreek, and carrots, and cover it for 10 mins. After 10 mins, mix it frequently and add potatoes, oil, peas, and black pepper. Cover the pressure cooker for 5 mins. After 5 mins, cook for 5 mins and dry the water. The delicious mix of vegetables is ready for serving. Enjoy it with roti.
